There should be a HOWTO - I am trying to work on one.

The problem you are likely having is that the Opie PIM apps do not ship 
with empty database files. On your Z try:

touch Applications/addressbook/addressbook.xml
touch Applications/todolist/todolist.xml
touch Applications/datebook/datebook.xml
