As a followup to these posts, I can report that the Sony Ericsson T630
works brilliantly with Multisync.

(By the way, the T630 is a replacement phone for my T68i which was
damaged)
I changed the bluetooth address in the backup and sync plugins. 

The backup plugin was the first to connect, and it presented a dialog
stating that it looked as if the device had been reset, would I like to
restore from backup? I clicked yes, and it took a little while to copy
all my contacts to the phone. When this finished, I had all my contacts
on the phone. The only slight hiccup is that one of the contacts had a
double entry, which was solved by quickly deleting the duplicate.

Multisync then proceeded to sync the phone and Evolution, which took a
while but went without a hitch. There were no doubled up contacts or
anything like that, and it asked me to resolve conflicts for tasks that
I had completed since my phone had died.

After that, I added 2 appointments to Evolution, and multisync started
syncing straight away, which I accidentally cancelled on the phone, as I
was doing something else.

I forced a manual sync from multisync, which loaded all the task lists
and contact lists off the phone and then proceeded to ask me to resolve
conflicts for the tasks again, and then for a number of contacts that I
have adjusted since my phone was damaged.  I did that and Multisync is
still syncing, which seems like a while now (about 20 minutes now),
which I might cancel and start again.
