MusiXTeX is based on TeX. So use:
\centerline{1st Movement}
\startpiece
\Notes...
\Endpiece
\centerline{2nd Movement}
\startpiece
\Notes...
\Endpiece
...
Easier with PMX - if I'm not in error - using repeatedly "Tt".
If not, one may use with PMX some-inline TeX like (untested):
c45 \loffset{???}{\zcharnote{??}{\hbox to \hsize{\hss n-th Movement\hss}}}\ ...
