Hmm... if the subject looks OK in vim and nano, then the corruption comes
after it is edited.

I cannot reproduce the issue with this. I suspect that on your machine,
the last UTF-8 sequence gets truncated, yielding an invalid character. You
should try with other subjects to see whether the issue comes from the
particular character υ or always on the last character.
Also, if you reply to the mail with the subject that doesn't look OK, is
the subject correct in vim? If yes, then that's only a display related
issue.
