It depens on which Terminal you use.
in aterm und xterm you can write:

aterm -name mutt -e mutt

That gives the terminal window the name mutt and starts mutt

Or you use:

aterm -T mutt -e mutt

same effect as above, but e.g. in Windowmaker you can select a
different icon to mutt then the aterm icon.
