I have been using junkfilter myself and have been relatively happy with
it.  It is essentially a list of procmail recipes that can be tuned,
turned on/off or excluded altogether. I even went so far as to modify
its activity so that it tagged the subject line of offensive mails with
[SPAM] so that my wife's Netscape rules could find the emails in her
inbox for her (can't talk her into mutt).

I have not tried Spam Assassin personally, but I imagine it has many of
the same features if you bother to take the time to read the docs ;-).
