I suspect there may be a change in behavior with iconv between BigSur and Sequoia. It would be helpful if I could have an example to work with. Would you be willing to provide an mbox with the problematic email to me, or to attach it to a GitLab ticket?
I don't have access to any MacOS computers myself, but I may be able to generate some debugging branches you could try, and we could see if we can figure out the strange behavior.
