Well, as it happens I've actually managed to solve this just after
sending out this mail.  It turns out all I needed to do was to remove
the "canvas" from those parameters (though sadly I can't claim to
understand how that's actually worked...).  So my VLC command is now:

"vlc -I Telnet --sout-transcode-fps 25.0000 --sout-transcode-width=720
--sout-transcode-height=576"

I'll put some of that info in the Wiki page (as it's now somewhat out of date).
