Fixed. This morning I went through the boot server configuration again here (http://mvpmc.wikispaces.com/H2+Linux+Boot+-+NEW) and added the mvprelay process and now it works. I had tried adding the mvprelay process before but it hadn't worked then, maybe rebooting my server along the way helped...
Once booted I just had to go into the 'Settings' menu and under MythTV add the IP for my MythTV server and it's all working again.....
