You have to change this on the book/collection definition page. If
you've created the book by browsing a wiki, you first need to save the
book to a wiki page, and then edit the resulting page.

The page has got all the wiki pages that are part of the book no it,
and you can give a new name to each of the pages, in the same way as
you change the name of wiki links, i.e. change

:[[ArticleNameWithAStrangeName]]

to

:[[ArticleNameWithAStrangeName| nice display name]]

At least for printing, this will work nicely. I tried this a while
back, and found that changing the names of links like that broke the
links within the pdf document, but it's possible that this is now
fixed.
