You are right, "automatic" printing of all pages in a category does not work. The Collection extension however supports adding all pages inside a category to your collection.
If you want to render categories from the command line you need to write a script which uses the mediawiki API to retrieve all members of a category. Look at e.g. http://en.wikipedia.org/w/api.php for reference
