Frankly it is not easy to implement technically. What if for reminder settings together with sending email you also add option Show in Reminders Window? This way the reminder will be sent to e-mail and shown in Reminders window. If you see that the e-mail is not sent due to any errors you click snooze for a few minutes and the e-mail will be sent when snoozed reminder activated next time. If email was sent the first time you just click Dismiss in Reminders window.
