Dear Steve, I'd suggest to play around with Automatic Formatting.
That's a VERY flexible feature, and you can easily achieve, what you're trying to do. You might want to save your previous formatting of a completed task. Or you could give a completed task a total different formatting, whatever you want. I myself at first, when that new feature came out, was "playing" a lot. But meanwhile I've reached a pretty "stable status", no need anymore to playing too much with Automatic Formatting. Anyway I've to admit, that this particular feature made my outline so much more clear and visibly logic -- I just love it.
