I'd like to see a feature along these lines. With my tasks I think in
terms of tasks with hard due dates/times. If they don't get done by
that due date then their late which is a big deal and should remain a
big deal until the job is done. The current functionality calls this
out appropriately. Then I have tasks that I'd like to get done by
some date, which implies that this end date is more of a 'target' date
than an actual 'due' date. I'd love to check some box that simply
says this is a target date instead of due date. Target dates would
remain fixed to the target date until that date has passed and then
they'd simply roll-over to the next day as each day passes until the
task is done or I change the target date. I've also heard this
referred to as a floating due date.

+1 for this feature!
