Tools - Options - Themes and Formatting - Date and Time Format... - Advanced
There's an option where it says "Show time if date within X day(s) from today. You can set that to 0 and then time won't be displayed. This will change it for all your tasks though, not just the completed ones. You can easily change the other settings around a bit so that you can fix that for the tasks that you do want the date to show for. (Just click the "Learn more on format string" link to see how to format the options the way you want them.) I believe that's what you're looking for if I've understood you correctly.
