Finally figured it out. Adding Reminder Fields to both Outlook and MLO, I could see that MLO was not passing along this field to Outlook. I am not sure how Outlook decided what the reminder date was supposed to be, but it usually chose the Due Date, however not always.
Within MLO, I found the Sync Reminders option under the Outlook Synchronization --> Advanced.
