I had a similar problem when using IP addresses for Wifi Sync between my iPhone and Windows laptop, as the IP address would be dynamically allocated on my broadband wireless home hub and change regularly. The solution I found was to specify the host name of the Windows laptop as the "PC IP" setting for Wifi sync on the iPhone.
