If I have a recurring task that I need to postpone the current occurrence of, I simply check it as completed and then uncheck it again. This generates the next occurrence as normal but then leaves the current instance active. I can even edit the due date if I want without affecting the next occurrence.
You need to make sure you are in a view that doesn't hide completed items or you will have to go searching for it, and also that the item is set to keep completed instances.
