The mobile (iOS, and I hear Android) version has more limited options for 
setting recurrence but, on the desktop version you can set recurrence to x 
weeks after you check a task off as completed.  You can always set that up 
and then manually change the date if it doesn't occur on a strictly 
consistent timescale.

However, the way I do it is to just reset the start and due dates on my 
task to the next occurrence, instead of checking off as completed.  For the 
record, I just make a note of the date of the last occurrence in the notes 
of the task. That works for me, rather than checking off.
