I do something similar, but I use ?name as the tag for people I've 
delegated things to in my notes and task captions. I often search for 
filter for a tagged name (for example, when I'm calling Tom, I might do a 
quick text search for "?Tom", to remind myself what else I need to discuss 
or check on with him. I haven't sorted tasks by name, as I generally only 
need to look at the tasks with one person's name at any particular time. 

It's not possible to sort by a word selected from the task note. If you 
want to sort by the names of people and the list of names is too long or 
changes too regularly to be used in contexts, why not dedicate the text tag 
to contact names? That should work pretty well.
