This is how I do it: make sure that the *Do not create a completed copy ...* option in the Recurrence Advanced Setiings is *not* set. Check the task as done (which moves the recurring task to next time). Then uncheck and change the time (and possibly other) properties to whatever you like for this newly created exception task.
