What operating system does the MySQL server reside? The ASCII representation for é is 233. Is this the same value for the host machine?

I've created a dump file to transfer the DB to MySQL, but when I execute the code, the é characters are lost. They're being created as VARCHAR.. I'm not a very experienced MySQL user.
