I don't have any direct Mac experience, but I find it hard to imagine that OS X doesn't support nfs. I currently run a backend and a remote frontend using nfs to share the video directory and it works great. Granted, both machines run Fedora Core, but I'm sure OS X supports nfs and it should work just fine for you. I've found ethereal to be a priceless asset in diagnosing network traffic/problems. You should be able to find a package for both Debian and OS X at http://www.ethereal.com/download.html. In addition to doing real-time capture and display of network traffic, ethereal can also read output files from tcpdump which would allow you to run captures on both the frontend and backend and then go back and directly compare the two files pretty easily.
