I had the same problems and they went away after an upgrade of the ivtv-drivers. They seemed to crap out after setting the channel and stuff.
Using ovtv 0.2.0-57_rc3a.rhfc1.at from atrpms.net now and they seem rockstable.
Anyways, it seems that you should search it in the drivers somehow. Are they loaded correctly and with the right settings?
