An update to this problem:
Finally got around to using my proper TV (NTSC and S-Video compatiable) and enabling S-Video on my TV, the test pattern's colour works fine (but looks werid, a bit checked or summat) but when I disabled S-Video, colour still worked but the "checked" effect went away, looked perfect - but colour doesn't work on my "test" TV, so I suspect it's displaying using NTSC?
But why do the test pattern work fine (when doing an insmod saa7127 test_image=1) but when using it when not using the test image, it doesn't display a clear picture (when doing an insmod saa7127) ?
As for the input, this is the best I could get (black and white, and with static on bottom 1/5):

Also when I do:
ivtvfbctl /dev/fb0 -noglobalalpha -localalpha
then
dd if=/dev/video of=/dev/video16 bs=64k
I get a complete terrible picture on the TV - I think it's due to the saa7127 not being loaded properly? Also the guide says to look in /var/log/messages to find out the correct bit for "of" but it never says anything about /dev/video in messages anywhere?
