This is where someone must chime in to let you know it's a bad idea not to have another user besides root on your machine....

The B&W output is only from within xine and only when running it under
the mythtv user.  Even in this situation, the MythTV interface is in
full color and xine is in full color when run as my user.

What distribution are you using on the system? Would you be willing to
compare some application versions and configurations?
