Would you mind sending me the line from your .nvidia-settings-rc file for sharpness? Mine has TVFlickerFilter, TVSaturation, etc, but nothing for sharpness.
One of the other devs has since pointed out that this feature is not supported or included in the GUI for all cards. Turns out that my 5200 has it but 440 does not. If your card supported it, it would be near the top of the attributes:
