Where exactly do you need to select this - is it in the video-sources section 
somewhere?  (e.g. is it where I choose /dev/dsp)
No - it would be in the "Capture Cards" section.
You can key in the ALSA:<alsa-device> but it won't matter. It will not be accepted. You are stuck with the OSS choises ( /dev/dsp....)
