I'm not sure how sophisticated you want to get but couldn't you just set up a source on the s-video with a dummy channel in Myth then essentially just push play on the VCR and record it?
My Dish runs in from s-video with a PVR250 and basically that's how I do recordings, it's not sophisticated as I said but it works temporarily.
