You will have to edit the mainmenu.xml file in /usr/share/mythtv You can edit other menus by browsing through the other XML files in that folder. Remember to save a backup of any menus you edit as they will be overwritten when upgrading.
You can also copy mainmenu.xml to your ~/.mythtv dir and edit it there. Any changes you make will be applied and it will keep you from messing up anything.
