able to control the volume coming out of my SPDIF using alsamixer.

it depends ... when using AC3 passthrough, no, you cannot adjust volume,
you must use your Dolby Digital compatible receiver to control volume
... when doing PCM (basically anything else except DTS), you can adjust
volume ... using a SBLive! Value 1024 here ...
