With that said, quick answer for you. Will MythTV be able to change channels? Yes, however you would need an IR blaster. It's a small device, connected to your PC, which, when you change channels in MythTV, sends a signal to a cable/satellite/FIOS box to change channel on this box. You can think of it as programming your TV remote to change channels on the cable box.
Going further with TV comparisons, MythTV sits AFTER your cable box, the very same way as your TV, not BEFORE the cable box. Hence, the TV signal from your wall goes to a cable box FIRST and THEN to MythTV and all the decoding (allowing output signal) will be handled by the cable box, not MythTV. So if you are looking for decoding (watching) channels which you are not subscribed to, MythTV is not what you are looking for. BTW, if your cable box has S-Video out (most likely that's the case) you don't have to use coax cable. Actually, you shouldn't use coax cable if you have any kind of tv service (physical box provided to you by your tv operator).
I know that I can offend many people on the list, but using a great (humongous) simplicity, MythTV has the same functionality as TV and VCR together. Obviously there is much more, but I don't want to overload you with the information.
