Is there a way to setup a backend slave server without having X

Yes. If you built mythtv with DirectFB support, you can just run the setup program. Otherwise, the easiest way is probably to ssh in from another X display, making sure to enable X11 forwarding. Otherwise, you can install a VNC server, connect with a VNC client, and run the setup program that way.

Both of which require having X (the X client libraries at minimum) installed on the backend... Think of it this way, though: X is just a "few" megabytes extra software on a system that routinely creates/processes multi-gigabyte files, so it shouldn't be that big a deal.
