Is there a way to easily install and configure a backend that doesn't

currently also my main desktop) to another headless box. However, it
doesn't have xorg installed. Since it is a server, that adds a lot of
extras that I don't see as being necessary.

Last I saw, mythbackend doesn't require X at all. Do you mean you aren't able to build or run it?

Is there a text/console/ncurses way of setting up a backend?

I assume you have some other machine to use a frontend, and presumably that has X on it. I suggest using that machine to do configuration for the backend, that't what I did.
