There's no auto discovery in Nagios. The documentation isn't completely silent actually... You can come a long way just by reading http://nagios.sourceforge.net/docs/2_0/toc.html just as Marc Powell suggested. The config files distributed with Ubuntu might have some comments which can push you in the right directive. Google-ing for 'nagios howto' or 'nagios documentation' gives loads of hits.
