Reading the page Joerg mentioned ( http://oss.oetiker.ch/rrdtool/doc/rrdgraph.en.html ) I would guess you could try the --pango-markup option and format the text in the watermark using pango markup tags. The link to the relevant page describing the pango syntax is broken - I assume it's this one now: http://developer.gnome.org/pango/stable/PangoMarkupFormat.html I'll leave it to you to find out whether you have a version of Pango which supports the required tags (and whether it works at all on the watermark text or not).
