Correction , you can not specify an email address in the service def.

you will need to create a contact and then define the contact in the server :

contacts     foo

or if he is part of a group

contact_group  Faa

but you specify the service notifications as

notification_options w,c

and in the contact definition you say which statuses it will alert on .
