It's never too late to renegotiate. Since you are the only NT the owner may not have realized that you would be doing ALL the "specials" and basically working for free. Bring it to the owners attention and find out what the deal is. Assume the best, not the worst. Go into the discussion with an attitude of it being a misunderstanding.
Hopefully you can work this out to make it a profitable promotion that will build your customer base.
