For BJ in Florida, I hope one of these is the recipe you are 
seeking.  Included them all since the cooking method was different 
in each recipe, and I wasn't sure which one you wanted.

SWEET POTATO BALLS
6 medium sweet potatoes
1/2 c. nuts
marshmallows
1/2 c. raisins
1/2 c. sugar
corn flakes or coconut

Boil sweet potatoes until tender. Mash; add sugar, raisins, nuts and 
flavoring. Thoroughly mix. Roll sufficient potato around 
marshmallows to cover and make ball size desired.
Roll balls in crushed corn flakes or coconut. Bake in slow oven.

SWEET POTATO BALLS
1 qt. sweet potatoes (after boiled and mashed)
1 egg, beaten
3/4 c. sugar
3/4 c. coconut
corn flakes, crushed
pkg. large marshmallows

Mix sweet potatoes, egg and sugar. Add coconut and enough crushed 
corn flakes to make mixture thick enough to stay together. 
Refrigerate until chilled. Make flat circle (I use
left hand.), put 1 marshmallow in center, put enough sweet potato 
mixture to cover marshmallow. Roll into a ball. Repeat. Makes about 
30 balls in crushed corn flakes. Deep fry 1 minute. Best when warm.

SWEET POTATO BALLS
1/4 c. butter, softened
3/4 c. firmly packed brown sugar
2 Tbsp. milk
1/4 tsp. salt
1/2 tsp. grated orange rind
chopped nuts (optional)
3 c. cooked mashed sweet potatoes
8 marshmallows
1 c. crushed corn flakes

Add butter, sugar, milk, salt, orange rind and nuts to sweet 
potatoes. Mix well. Shape 1/4 cup mixture around each marshmallow, 
using more potatoes as needed to make ball. Roll
each ball in corn flakes (or coconut). Place on buttered baking 
dish. Cover with foil; freeze until needed. Bake at 325 degrees for 
20 minutes.

This is for Carolyn who was looking for a recipe where you cook a 
cake mix
and make balls dipped in chocolate from it. Here are two I had in my 
files
from friends and one from a web site. Happy Baking, Joyce 

Cake Balls 

any type of leftover cake 
semi-sweet chocolate chip 

Take your leftover cake and SMUSH it altogether with your hands. 
Make small balls about quarter size. In a double boiler, melt the 
chocolate. Take a fork and dip the cake balls in the melted 
chocolate. Place the balls on a piece of aluminum foil to cool.  You 
will likely need two 12 ounce bags of chocolate chips per one cake 
mix.

OR
Take canned frosting, and melt it in the microwave, for maybe 10 
seconds. Then stir it, and then take a fork and dip the cake balls 
in the melted frosting. Place the balls on a piece of aluminum foil 
to cool.

CAKE BALLS

sprinkle candies - or stripe with seasonal colors.

This is for Kat for the Beans and Greens. This is my mother-in-law's 
(101 years old) true Italian recipe and it is delicious.

6 cloves of garlic crushed 
2-15oz cans white beans (cannelloni) 
2 15 oz chicken broth 
1 head escarole 
1/2 cup white wine 
Salt and pepper 

Saut� garlic in olive oil on med heat (do not burn). When you smell 
the aroma of the garlic add chicken broth. Bring to a simmer and add 
beans. Cook for about 10 minutes and add chopped escarole. Once 
wilted add 1/4 to 1/2 parmesan or romano cheese. Very easy and 
delicious.

recipe from the early 1900 hundreds. It is a Cole slaw dressing, and 
I think my granny put an egg in it but I'm not sure. Is anyone

Candy Bar Cake
1 baked chocolate cake of your choice

While cake is baking, prepare toppings.

First Topping
1 cup milk
24 large marshmallows
1 cup granulated sugar
1 (14 ounce) package coconut

Heat until dissolved, then add coconut.

Second Topping
1 1/2 cups granulated sugar
1/2 cup milk
1/2 cup (1 stick) butter
1 1/2 cups semisweet chocolate chips

Heat sugar, milk and butter until boiling. Add chocolate chips; stir 
until dissolved. While cake is hot, spread coconut mixture over 
cake, then chocolate topping over the coconut.

 Mounds Cake               

1   package chocolate cake mix
1-1/2 c milk - divided
14   oz coconut
1-1/2 c chocolate chips
24  lrg marshmallows (or 3 c of miniature marshmallows)
2-1/2 c sugar
1 stick butter

Follow the directions for the cake mix; bake in a 9 x 13 pan.  Heat 
marshmallows, 1 cup of milk, and 1 cup of sugar until the sugar and 
marshmallows melt.  Stir in coconut and pour over the cake.  Heat 1-
1/2 cup sugar, 1/2 cup milk, and the stick of butter to boiling. 
Remove from heat and add chocolate chips; stir until melted.  Pour 
over coconut layer.  Refrigerate to set the chocolate glaze (I 
always serve it chilled--it just tastes better).  Tastes like a 
Mounds bar on top of a chocolate cake.  Serves 12-14.

No-Bake, No flour Fruit cake
 
1 cup (225 ml) raisins 
2 cups (475 ml) dates 
2 cups (475 ml) candied fruit 
4 cups (950 ml) nuts, chopped 
3/4 cup (175 ml) evaporated milk 
2 cups (475 ml) marshmallows 
2 cups (475 ml) crushed graham crackers 

In a bowl mix raisins, chopped dates, candied fruit and chopped 
nuts. 
In a saucepan bring evaporated milk to a boil; add marshmallows. 
Stir till thoroughly combined; set aside. Crush graham crackers and 
stir into the fruit and nut mixture. Add the marshmallow mixture. 
Using wet hands, press the mixture into a 9" loaf pan lined with 
waxed paper. 
Press down well and refrigerate until set. 

No-Bake Holiday Fruitcake
Easy fruitcake that doesn't require baking. You can use mixed 
candied fruit instead of the cherries and pineapple. In fact, any 
other type of candied fruit works just as well. Originally submitted 
to CakeRecipe.com. Makes 1 - 9x5 inch loaf (12 servings).

1 (16 ounce) package graham crackers, crushed
6 ounces red candied cherries, coarsely chopped
6 ounces green candied cherries, coarsely chopped
6 ounces candied pineapple, coarsely chopped
2 (14 ounce) cans sweetened condensed milk
1-1/2 cups chopped pecans
 
Line one 9x5 inch loaf pan with plastic wrap, allowing wrap to hang 
over edges a few inches.  In a large bowl, combine the graham 
crackers, red and green cherries, pineapple, pecans, and the 
sweetened condensed milk, using your hands mix thoroughly. Place 
mixture into lined pan and cover well. Freeze for at least 8 hours 
or overnight before serving. When ready to serve; invert onto a 
serving platter, remove pan and plastic wrap, and slice. Store any 
remaining cake in the freezer.

Best-ever No-bake Fruit Cake 

3/4 c Milk
1 lb Marshmallows
1 lb Graham crackers
1 lb Seedless raisins
1 lb Dates
1 pt Jar mixed candied fruit
4 c Walnut or pecan meats (up to 8 c )
Candied cherries and pineapple
Blanched almonds
Sherry


Put milk into saucepan. Scald over low heat. Add marshmallows. Stir 
constantly and cook until smooth. Remove from heat. Put graham 
crackers into paper bag. Crush with rolling pin. Mix crumbs with 
raisins, mixed candied fruit and nuts. Add marshmallow mixture and 
blend well.

Peter Paul Mounds Cake

CAKE
1 stick  margarine
1 cup  sugar
4 eggs
1  cup  self-rising flour
1  large can  chocolate syrup
1  teaspoon  vanilla

FIRST ICING
1 cup  sugar
1 cup  milk
12 large  marshmallow
1-14 oz package  fine coconut
1 teaspoon  vanilla

SECOND ICING
1 stick  margarine
1/3  cup  milk
1 cup  sugar
1 teaspoon  vanilla
1 large package  semisweet chocolate chips

Bake all the above cake ingredients in a 325:F oven for 50-60 
minutes. To make the FIRST ICING: Bring the milk to a boil and boil 
5 minutes. Add the sugar and marshmallows and stir until melted. 
Remove from heat and add coconut and vanilla. Spread on cake. To 
make the SECOND ICING: Bring all to a boil and boil 2 minutes. 
Remove from heat and add the chocolate chips. Stir until melted. 
Spread on top of coconut.
    
Per serving: 6622 Calories (kcal); 265g Total Fat; (34% calories 
from fat); 61g Protein; 1069g Carbohydrate; 792mg Cholesterol; 
4322mg Sodium
Food Exchanges: 6 Grain(Starch); 3 Lean Meat; 0 Vegetable; 0 Fruit; 
50 Fat; 63 1/2 Other Carbohydrates

Dark Roux

1 1/2 c. of oil
2 c. self-rising flour

In large saucepan, heat oil over high heat. Gradually add flour 
while continuing to stir. Cook over medium heat until dark brown. 
Yield: 1 3/4 cups

Creole Gumbo

1-1/2 tablespoons minced garlic
1/4 c. oil
3 cups chopped onion
1/2 cup of chopped green pepper
3/4 cup chopped celery
1 1/2 tablespoons salt
1 /2 teaspoon cayenne pepper
2 bay leaves
1/2 c. dark roux(above recipe)
1 (10 oz.) can rotel tomatoes diced and drained
11 cups water
1 lb. crabmeat
3/4 cup okra (boiled in water and a little vinegar) drained
1/4 cup chopped green onions
1/2 lb. fresh, peeled 90 to 110 count shrimp
( that means that there are that many shrimp per lb.)
1/2 lb. boneless chicken, cut into strips
3/4 lb. smoked sausage, sliced

In a small saucepan, saut� garlic in oil until golden brown.  In a 
large pot combine yellow onions, bell peppers, celery and saut�ed 
garlic. Cover and simmer 10 to 15 minutes over low heat. Add salt, 
cayenne pepper, bay leaves, dark roux. Stir. Add Rotel tomatoes and 
water. Stir. Add crabmeat. Cook gumbo over low heat for 1 hour or 
more. Add okra, green onions, chicken, and smoked sausage. Cover and 
cook until chicken is done. Add shrimp and cook until shrimp is 
done. Serve over rice. Serves 6 to 8 people.

Hello, I hope you can help me. 

I' looking for a chocolate cake recipe that I found in " I think 
Woman's World" about 3 years ago. I moved and lost all my recipes, 
this cake had jam in between the layers and the chocolate frosting 
which was poured over the top was made of powdered sugar whipping 
cream, and I don't remember how I made it chocolate color. the top 
was topped with whole strawberries dipped in chocolate. I have 
searched many times and have emailed many people and no one seems to 
have this recipe or even remember seeing it in the magazine. I'm 
beginning to think I'm out of my mind. can you help?

Hi Nancy----For Todd who is looking for a good Caesar dressing---I 
use the recipe in Joy of Cooking, substituting anchovy paste for the 
canned anchovies.  This way I can increase or decrease the taste 
depending on who is going to eat it.  I find this dressing the best.

For Char who was looking for a tomato Florentine soup recipe - here 
goes:

Tomato Florentine Soup

4 cups water
1 bouillon cube
1 bay leaf
1 medium onion, diced
1 1/2 cups diced tomatoes
4 cups tomato sauce
1/2 pound spinach, rinsed well and drained
Salt and pepper, to taste
Roux or cornstarch (optional)

In a large pot, combine water, bouillon cube and bay leaf over 
medium high heat. Bring to a boil, then add onion, tomatoes and 
tomato sauce. Stir well and continue to cook 3 to 5 minutes longer. 
Add spinach and salt and pepper. If desired, thicken with a roux 
(melted butter-flour mixture) or cornstarch. Remove bay leaf before 
serving.
Makes 8 servings. 

Found this recipe on here a while ago and tried it too - it's 
yummy.  :)

A senior moment.  I saw a recipe somewhere in the past month for a 
dessert using ice cream sandwiches layered in a 9X13 pan.  Then a 
can of pie cherries was put on top of that and then I think whip 
cream.  Did anyone else see this recipe and if you did would you

Nancy, I am sending this for Anna in Sweden.  There are hundreds of 
recipes for All Purpose Baking Mix.  I have made baking mix and it 
works as good (if not better) than store brands.  I hope this saves 
her some time and money.

BISCUIT MIX (ALL PURPOSE BAKING MIX)
 
4-1/2 cups  all-purpose flour
5 teaspoons  baking powder
1 teaspoon  salt
5 tablespoons  solid shortening
3 tablespoons  unsalted butter -- cut up
                        
In  a large bowl whisk together dry ingredients. With electric mixer 
on low or #2 of a 3 speed mixer, cut in fats until uniform in 
texture and fat particles are no longer visible. Remove from mixer.  
Divide among 3 air tight

Yield 3 batches mix.

Bisquick Mix
                        
9  cups  flour -- sifted
1/3 cup  baking powder
1 cup  powdered milk -- plus 2 tablespoons
4 teaspoons  salt
1-3/4 cups  vegetable shortening
                        
Sift all dry ingredients. Cut shortening into flour until mixture 
resembles coarse cornmeal. Store well covered in a cool, dry place. 
You can use this for waffles, pancakes, biscuits and for coating 
chicken

Someone recently was looking for a peanut butter brownie with a 
chocolate layer.  I found this recipe on the 
http://www.recipegoldmine.com  site.  Hope it helps.

Peanut Butter-Cocoa Brownies

3/4 cup butter or margarine
3/4 cup creamy peanut butter
1 3/4 cups granulated sugar
2 teaspoons vanilla extract
4 eggs
1 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 cup cocoa
Heat oven to 350 degrees F. Grease a 13 x 9-inch baking pan.
Melt butter. Add peanut butter; stir until peanut butter is melted. 
Stir in sugar and vanilla extract. Add eggs; beat well with spoon. 
Add flour, baking powder and salt; beat well. Remove 1 3/4 cups 
batter; stir cocoa into this part. Spread chocolate batter into 
prepared pan. Spread remaining batter over top. Bake 30 minutes or 
until brownies just begin to pull away from sides of pan.

Cool completely in pan on wire rack. Cut into bars.
Makes about 36 brownies.
