Chocolate Cornstarch Pudding My mom's best chocolate pudding recipe made with cornstarch and cocoa. Makes 4 servings. 1/2 c white sugar 3 tbs unsweetened cocoa powder 1/4 c cornstarch 1/8 tsp salt 2 c milk 2 tbs margarine or butter 1 tsp vanilla extract In a saucepan, stir together sugar, cocoa, cornstarch and salt. Place over medium heat, and stir in milk. Bring to a boil, and cook, stirring constantly, until mixture thickens enough to coat the back of a metal spoon. Remove from heat, and stir in margarine and vanilla. Let cool briefly, and serve warm, or chill in refrigerator until serving. Kim ============================================= Cornstarch Pudding Recipe for Ann in Duncanville, TX - also called Blancmange. One of my childhood favorites. Jann in Fargo Blancmange 3 tablespoons cornstarch 1/3 cup sugar 1/8 teaspoon salt 1/2 cup cold milk 1 1/2 cups milk, scalded 1 teaspoon vanilla Mix cornstarch, sugar, and salt; combine with cold milk. Gradually add hot milk. Cook in double boiler, stirring until thick; cover and cook 15 to 20 minutes. Add vanilla. Pour into molds, rinsed with cold water; chill until firm. Serve with fresh or canned fruits, cream or pudding sauce. If pudding isn't to be molded, increase milk to 2 1/2 cups. The same amount of arrowroot or 6 tablespoons flour may be substituted for cornstarch. Serves 6. Variations: Butterscotch Pudding: Substitute brown sugar for granulated sugar and add 3 tablespoons butter with hot milk. Caramel Pudding: Increase sugar to 1/2 cup, caramelize half the sugar; dissolve in hot milk. Mix remaining sugar with cornstarch and salt. Chocolate Pudding: Increase sugar to 1/2 cup and total amount of milk to 2 1/4 cups. Mix 1/3 cup cocoa with cornstarch and sugar, or melt two 1-ounce squares unsweetened chocolate in milk. Cornstarch Custard: Beat 2 egg yolks with 2 tablespoons of the milk; stir in some of the hot mixture and add the last 5 minutes. Fluffy Pudding: Fold 2 stiff-beaten egg whites into mixture before chilling. ============================== Hi Nancy, this is for Ann Duncanville, TX who wanted a recipe for Cornstarch Pudding. This comes from my high school home ec. class back in 1948. (The cook book is in tatters now, used it extensively when I first married). Vanilla Cornstarch Pudding (Four servings) 2 cups milk 1/4 cup sugar 3 tablespoons cornstarch 1/4 cup sugar few grains salt 1/2 teaspoon vanilla Scald milk, leaving about 2 tablespoons in cup. Mix cornstarch, sugar and salt with cold milk. Add scalded milk to this mixture, stirring until blended. Re�turn to double boiler. Cook 10 minutes and remove from heat, cool. Add vanilla. Pour into individual moulds or into one large mould which has been rinsed in cold water. Chill Suggestion: Less cornstarch may be used to make a thinner pudding which will not mould Variations Serve with milk, cream, soft. custard, chocolate sauce, fruit sauce, or garnish with bananas or crushed fruit. For chocolate pudding follow the same recipe adding 3 tablespoons cocoa and 2 additional tablespoons sugar Standard Shape of mould-cornstarch thoroughly cooked, smooth-cold ============================= For Nora in Iowa: This is the easiest by one of the tastiest punch recipes I have ever seen. My friends and I use it often for wedding receptions. You need 5 containers (48 oz, each) of strawberry soda pop and 2 tall can of pineapple juice or 24 bottles of regular strawberry pop to the 2 can of pineapple juice. Heather Alfredo Rotini 15 ounces ricotta cheese 2 eggs, beaten 2 cups mozzarella cheese, shredded 3 tablespoons minced fresh parsley 1/2 teaspoon salt pinch black pepper 12 ounces rotini, cooked and drained 28 ounces alfredo sauce Preheat oven to 350F. In a medium bowl, combine ricotta cheese, eggs, 1 cup mozzarella cheese, parsley, salt and pepper; stir to mix well. In another bowl, combine hot cooked pasta and alfredo sauce. Layer half of pasta mixture in an 11 x 7 inch baking dish. Evenly layer with cheese mixture and remaining pasta mixture. Bake, covered, 35 to 40 minutes or until bubbly. Uncover; top with remaining mozzarella cheese. Bake 5 minutes or until cheese melts. ===================== Hi Nora, what an exciting time, congrats to your son, this is a punch recipe I have used for years, always requested for family functions, birthdays, weddings etc, pretty simple too, this will make a gallon. Start with a gallon pitcher, then transfer to punch bowl if you like 2 pkgs raspberry Kool-aid--only add about 1 1/2 cups of sugar 1/3-1/2 can already made pineapple juice 1/3-1/2 bottle of sprite (2 liter) fill pitcher the rest of the way up with water, add dollups of raspberry sherbet--about 6 ice cream scoops is good, stir and enjoy!!! You can change the kool-aid and sherbet to meet whatever your colors are or whatever flavor you like. Michelle in Iowa ======================== In response to Carla's request for dipping sauce This came from a baseball park. This is so good on chicken fingers, blossom onion, salad dressing. French fries or anything. 1 cup mayonnaise 16 oz. sour cream 9 oz. horseradish sauce 1 jar chili sauce cayenne pepper to taste. Mix all ingredients together. Makes 1 quart and 1 half pint. This is for Marie in VA regarding getting the strong taste out of chicken livers (or any liver for that matter). Soak liver, including chicken livers in milk or condensed milk (Pet, Carnation, etc.) for 1 to 3 hours before preparing and cooking them and the strong taste will have disappeared and you'll enjoy mildly tasting liver. I would if the ladies can explain it to me. In the method it asks for jelly but there is no jelly in the list of ingredients. Here is the recipe. I sure would like to make it. If it is just ordinary jelly of some sort can someone recommend something? Sweet Onion Brie Bundles 2 Tbsp. butter 2 Vidalia Sweet onions sliced into 1 inch rings � cup sherry � cup chopped pecans 2 sheet philo pastry 7 oz. brie wheel � cup red pepper In a skillet over medium heat-high heat, melt butter. Add onions, salt and pepper: cook. Cook until onions brown Add sherry, bring to a boil. Reduce heat and simmer until liquid has evaporated about 10 minutes. Stir in pecans. On baking sheet, place phyllo pastry, top with brie. On top of brie, spread jelly. Brush phyllo edges over side of Brie. Leaving top bare. Place onion mixture on top of Brie. Bake in 180(350%) until pastry is golden. About 15 minutes. Serve warm. I made it for my late mother-in-law's 90th birthday almost twenty years ago, and never heard of a fruit pasta salad but wanted something different. Enjoy, jmc Fruit filled Macaroni Salad 1 bottle (8 oz) oil and vinegar dressing 2 Tbsp. orange juice 1 Tbsp honey 1 tsp. grated orange rind 1/2 tsp. paprika 2 c. (7 oz.) macaroni, cooked and drained 1 c. chopped pears 1 c. chopped plums 1 c. chopped peaches 1 c. chopped cantaloupe 1 c. grapes Combine dressing, juice, honey, rind and paprika; mix well. Combine 1/2 cup dressing mixture, macaroni and fruit; mix lightly. Serve over lettuce wedges, if desired, with remaining dressing. Joann, this is the one I use (found it on the web) and the dumplings are yellowish and sponge-like. 3/4 cup milk 1/2 teaspoon salt 1-1/2 tablespoons all-purpose flour 1/2 cup cold water 1 cup all-purpose flour 3 eggs, beaten 1 cup all-purpose flour Place the milk and salt in a saucepan, and set over medium heat. In a small bowl, mix together 1 1/2 tablespoons of flour and water. When the milk begins to bubble, stir in the flour mixture, and cook stirring constantly until thickened, 2 or 3 minutes. Let cool until set. You can put the mixture in the refrigerator to speed the process. Fold the eggs into the chilled dough. Add 1 cup of flour and mix thoroughly (dough will be lumpy). Drop into simmering soups by the teaspoonful. Simmer covered for 10 minutes, remove lid, and simmer 10 minutes more. ================================== A couple weeks ago, Marty asked for a recipe for a Greek Casserole. What she is talking about is Pastitsio. This is my sister, Kathy's, recipe. She and I have been making this for a very long time, and it is delicious! >From the kitchen of Kathy Mills, Augusta, Georgia 1 pound macaroni 1/4 pound butter 1-1/2 pounds ground turkey or beef 1/2 can tomato paste 6 ounces grated Romano or Parmesan cheese 1 medium onion, chopped 1/2 teaspoon cinnamon 1/2 teaspoon nutmeg Salt and pepper Sauce: 4 cups warm milk 5 eggs 6 tablespoons flour 3/4 cup (1 1/2) sticks butter Cook macaroni (but not well done) in boiling, salted water and drain. Saute onion in a little butter. Add ground meat and stir until brown. Add tomato paste, thinned with a little water. Add salt, pepper, cinnamon and nutmeg. Cook until meat is done. Melt butter; pour over drained macaroni, mixing carefully. Spread half of the macaroni on the bottom of a 13 x 9-inch pan. Sprinkle half of the grated cheese on top. Spread entire meat mixture on top. Cover with remaining macaroni and remaining grated cheese. For the Sauce, boil 3 cups of the milk with 1 1/2 sticks butter. Add flour to remaining 1 cup milk and blend well. Add flour mixture to boiling butter and milk. Thicken and cool. After this has cooled, add 5 beaten eggs, or drop small amounts of the milk mixture into the eggs while stirring constantly. Once the egg mixture gets warm to hot, add the remaining milk. Pour sauce over the macaroni. Shake the pan and insert a knife to penetrate thoroughly. Bake at 350 degrees F for 40 to 45 minutes. What can I do with them? (pies, cobblers, cakes, sauce). Mariana ============================ Jenn in Maine you can make meals in a Crock Pot such as soups, meat dishes, potato, rice, and many more. At one time I had an oven that was out and I made pizza in two skillets on top of the stove. You can also use an electric skillet to cook meals in. In the crock pot I have cooked spare ribs BBQ and they are better than any done in the oven. I have put frozen with the bottom of crock with BBQ sauce, then single layer of ribs, little more BBQ sauce, then ribs and continue this until your ribs are gone and then add a little more BBQ sauce on top. In about 3 hours with the turkey baster drain all the liquid out of the pot and put just a little more sauce on top. Cook them at least 6 to no more than 8 hours. Good luck.
