I want the daily newsletters to be posted in email instead of 
online.  Why did you change?

The newsletter is scheduled to go out two times a week on Wednesday 
and on Friday. Last week there was an exception to this because I was 
out of town and the computer I was going to use had a virus on it and 
had to be repaired. The hard drive had to be reformatted and programs 
had to be reinstalled. I was able to use another computer but did not 
want to tie up their computer for hours doing both the online version 
and the email version of the newsletter. It takes about 20 minutes to 
do the online version of the newsletter and about 2-3 hours to do the 
email version of the newsletter.

The newsletter will continue to be sent out as an email newsletter 
each Wednesday and Friday. Additional messages will be posted online 
to help both help those that are having mailboxes over quota issues 
and to post all the great replies, requests and messages in a more 
timely manner. A short email alert will be sent out each time a new 
newsletter has been posted online with the URL of the newsletter or a 
member may choose main page of the site http://www.aliciasrecipes.com
and press the CONTROL key and the F5 key (at the same time) to 
refresh the index on the page for the link to view the most recent 
newsletter. Often there is a delay of several hours before the email 
message is sent out alerting the member it has been posted.

I would like to see all of the online version of the newsletter 
posted to the email version.  Why is the online version shorter than 
the email version of the newsletter?  I have time to read the emails 
but not time to go to the online version.

The newsletter is very limited in the size it can be.  If the 
newsletter is longer than 10 pages (when typed in Word) the member 
would not be able to pull the newsletter up and possibly view it. If 
this email newsletter had the entire newsletter online it would take up 
over 30 pages of text.  As a result only 1/3 of the newsletter can be 
included in this email version.
Several things might happen if I tried to include all 30 pages
-Only the first few lines would appear on the email
-The email would not view at all and would say there was an error in 
the email.
Because of these reasons the full online version will not be included 
in the email version.

My trip to Arizona was great.  I was able to visit with my brothers 
John and Joe and their wives while I was there.  One day we went up 
to Williams and looked around.  We also went to Prescott so I could 
visit the used book stores.  It was a very nice trip.  

I went back several hours early on the shuttle from Prescott to 
Phoenix to meet Linda and her husband.  It was great eating lunch

Blueberry Buckle

Sift in bowl:
4 cup flour 
1 cup sugar
4 teaspoon baking powder 
1/2 teaspoon salt

Add:
2/3 cup shortening
2 eggs
1-1/2 cup milk

Add 2 cups blueberries. Mix all together and pour to large pan, 13x9 
inches. 

Cover with topping of: 
1 cup sugar
4 tablespoon flour
4 tablespoon oleo
2 teaspoon cinnamon

Bake at 375 for 30 minutes. (Very good)

My Favorite Cole Slaw
Serving Size : 4 

1 tsp salt
1/4 tsp pepper
1/2 tsp dry mustard
1/2 tsp celery seed
2 tbsp sugar
1/4 cup green pepper -- chopped
1/2 tsp onion -- chopped
2 tbsp vegetable oil
1/3 cup red wine vinegar
3 cups cabbage -- chopped
1 carrot
3 radishes

Grate cabbage and 1 carrot, 3 radishes. Mix dressing and add to 
cabbage 

Per Serving (excluding unknown items): 117 Calories; 7g Fat (51.5% 
calories from fat); 1g Protein; 14g Carbohydrate; 2g Dietary Fiber; 
0mg Cholesterol; 553mg Sodium. Exchanges: 0 Grain(Starch); 0 Lean 
Meat; 1 Vegetable; 1 1/2 Fat; 1/2 Other Carbohydrates.

Basic Red Sauce

4 to 6 dried Red Ancho Peppers, or fresh Pablano Peppers 
2 cups of water

If using dried peppers, remove stems and seeds, wash peppers and 
place in pan with water. Bring to a boil; cover and remove from heat. 
Let sit 1 hour. Put peppers in blender with just enough water to 
puree to a thick sauce. Heat a Tbsp. of oil in pot. Add pureed 
peppers to oil and fry. Add a little more of the pepper water, 
keeping the mixture medium thick. Cook until mixture makes a nice 
sauce and is very smooth.

Using Fresh Peppers: 
Cut peppers in half, deseed and cut out membrane. Put pepper halves 
cut side down until broiler and char the skin, but do not burn it. 
Remove from broiler. Skin peppers and follow directions above for 
making sauce.

This is good over Enchiladas, Tamales or anything Mexican you want a 
good mild flavored chili sauce on.

Lisa was looking for a "Hot Pepper Jelly" recipe. I have had this 
recipe for years; however, our markets now carry pepper jellies so I 
no longer make my own. I served this with Phila. Cream Cheese and 
Hunt Club crackers.

HOT PEPPER JELLY

3 large sweet green peppers
12 small green chili peppers
1/3 cup water
5 lbs. sugar
3 cups cider vinegar
2 bottles Pectin (Certo)

Seed green peppers and chili peppers - cut into pieces. (If you like 
it hot, leave seeds in chili peppers. If not too hot, remove seeds 
from chili peppers. Be sure to wear gloves when removing seeds). 
Place sweet and chili peppers and water in blender. Blend until 
smooth. Dissolve sugar in vinegar and heat until clear. Add pepper 
mixture and bring to a boil. Boil for 5 minutes (use very large pot 
as it will boil over easily). Add Certo and boil for 1 minute. Skim 
off foam. Add food coloring if desired (half of mixture red, and half 
green. Great for Xmas giving). Seal in clean glass jelly jars. Makes 
12-13 one-half pints.

**Note: Use Pectin in foil packages - others do not work such as Sure-
Jell.

This is for Judy who wanted sweet and sour cole slaw. . I had this 
many years ago at a resort in upstate New York and was lucky enough 
to be given the recipe.

Celery Seed Dressing
1 C. sugar
1 tsp dry mustard
1/2 tsp salt
1/2 C. apple cider vinegar
1-1/2 C. oil
2 to 3 tsp celery seed
2 tsp grated onion

Put everything but the celery seeds in the blender and emulsify. Stir 
in celery seeds. Pour over finely grated cabbage. (You may add grated 
carrots, etc., if desired.) This is definitely a cut above the usual 
Cole slaw.

Heavenly Peach Jam

3 pound ripe peaches, finely cut or mashed
3 pound sugar
juices and pulp of 2 oranges
1 (5 oz.) bottle cherries, finely chopped

Soak peaches in sugar for 1 hour. Add orange juice, pulp and 
cherries. Cook for 1 hour. Put in jars, seal while hot.

Chicken and Rice Soup

3 or 4 boneless, skinless Chicken Breast and boneless, skinless 
Chicken Thighs, cubed 
2 medium Onions, chopped 
4 Ribs Celery, sliced 
3 medium Carrots, julienned 
1 Zucchini, sliced 
1 can Tomatoes, seeded, drained and cut-up 
1 (41-1/2 oz.) can Swanson's Chicken Broth 
12 tsp. Instant Chicken Bouillon granules + 12 cups Water 
2 Tbsp. Olive Oil 
1 cup Rice, uncooked 
1 Bay Leaf 
1 tsp. minced bottled Garlic 
1/2 tsp. Poultry Seasoning 
1/4 cup fresh snipped Parsley

Saut� chicken and raw vegetables except zucchini in olive oil until 
chicken is cooked and vegetables are crisp-tender. Add all other 
ingredients except zucchini. Bring to a boil, reduce heat, stir, 
cover and simmer 1 hour. Add the zucchini, stir well, cover pot and 
turn off heat. Let sit covered 1 hour and soup will be ready to serve.
*I don't care for zucchini and I add 1 cup frozen peas instead.

Regarding the Cole slaw recipe without mayonnaise:

I use a dressing that is 
1/3 c oil
1/3 c vinegar, cider is best
1/2 cup sugar
dash of celery seed or salt
dash of mustard - whatever is on hand

Mix in bowl with mixer or put into blender and pour over chopped 
cabbage, onion, green pepper and carrots - tastes a lot like the old 
KFC recipe!

This is for Judy....this is called Pepper Cabbage, a slaw served here 
in Pa. Dutch country. 

PEPPER CABBAGE

1 lb. green cabbage, shredded
1/2 c. finely chopped green pepper
1/2 c. finely chopped celery
1/4 c. grated carrot (optional--some people don't use this)
1/2 c. cold water
5 Tbsp. white vinegar
1/4 - 1/2 c. white sugar
1 tsp. salt
Pepper to taste

Combine the cabbage, green pepper, celery and carrot in bowl. Toss 
well. Combine the dressing ingredients in a medium bowl and stir 
until the sugar dissolves. Pour over the cabbage mixture and toss 
together. Cover bowl tightly and marinate in refrigerator for several 
hours before serving. Stir & taste for seasoning. (Will keep in 
refrigerator for several weeks.)

1 box Devil's Food Cake Mix (any brand)
1 (15 oz) can Libby's 100% pure pumpkin

THAT'S CORRECT...JUST 2 INGREDIENTS

Spray 9x13-inch baking dish with Canola spray. Using hand mixer, mix 
the two ingredients until all lumps
are removed. Batter with be thick. Pour into baking dish and spread 
evenly. 
Bake according to directions on cake mix package.

Serving: 12

Tips and Hints

When cooking cabbage or onion add a wedge of lemon to prevent odor. 
Rubbing lemon on the bottom of your feet makes them soft. To prevent 
old potatoes from turning black, add 1 teaspoon vinegar before 
storing in refrigerator. 

When you are using eggs and oil in baking, crack eggs into a 
measuring cup first and pour them into mixing bowl; they coat the cup 
then when you measure the oil it will slide out without coating the 
sides. 

Before squeezing lemons submerge in hot water for 15 minutes. You 
will get more juice.

Mash overripe bananas or push through sieve, add a little lemon juice 
to prevent the from turning brown, and freeze. Thaw and use later in 
cakes or breads. 

Save leftover pie dough, wrap in aluminum foil and freeze. Use for 
instant topping for a fruit pie, grate frozen dough over top. 

Hard boiled eggs will peel more easily if, immediately after cooking, 
plunge into bowl of cold water. Then crack them gently all over, let 
them remain in water until cooled. 

Quick way to stuff hard boiled eggs is to place stuffing in a pastry 
bag and squeeze away. 

You can make a pastry bag by cutting a small hole in corner of 
plastic bag. Fill and squeeze. 

When a small piece of egg shell falls into the mixing bowl, lift it 
out using half an eggshell as a scoop. It will attract the other 
piece. 

Use pieces of newspaper and water (or Windex) to clean your windows. 
It really works well and leaves no lint behind. Be sure to wear 
rubber gloves, though, or your hands will get black!

Basic Sour Dough Starter
1 pkg. active dry yeast
1 tsp. salt
1/4 c. very warm water
1/2 c. sugar
1 c. very warm water
1 tbsp. vinegar

Dissolve yeast in 1/4 cup warm water, mix in other ingredients and 
let stand in warm place 2 to 3 days. Put starter in refrigerator 3 to 
5 days. Take out and feed with: 
1/2 c. sugar
3 tbsp. instant potato flakes
1 c. warm water

Mix with Wooden Spoon. Leave out of refrigerator all day. This does 
not rise or bubble. That evening late take out 1 cup of starter to 
make bread and return rest to refrigerator. If not making bread or 
rolls after feeding, give away a cup or throw away a cup. (Starter 
must be fed every 3 to 5 days.)

1 head cabbage shredded 
1 small onion chopped

Mix well all ingredients in a bowl with airtight lid. Refrigerate 
overnight. Shake well to blend and refrigerate until set.
