Nancy Slaw recipes submitted by Heather Apple Cabbage Slaw 1 medium apple(s) 1-1/2 teaspoon fresh lemon juice 1 cup cabbage 1 cup celery 1/2 cup light mayonnaise 1/8 teaspoon table salt 1/4 teaspoon black pepper Shred cabbage, dice apple. In a bowl, toss apple with lemon juice. Add remaining ingredients and toss to coat. Refrigerate any leftovers. === Cole Slaw 1-1/3 cups mayonnaise 3 tablespoons white vinegar 2 tablespoons plus 2 teaspoons granulated sugar 2 tablespoons milk dash salt 8 cups chopped cabbage (1 head) 1/2 cup shredded carrot Combine all ingredients except the cabbage and carrots in a large bowl and blend until smooth with an electric mixer. Add cabbage and carrots and toss well. Cover and chill overnight in the refrigerator. The flavors fully develop after 24 to 48 hours. ===== Coleslaw 1 med. head of cabbage, chopped 1 med. onion, chopped 3 carrots, grated 1/2 c. red pepper, chopped 1/2 c. green pepper, chopped Toss together ingredients. Dressing: 1 c. vinegar 1 c. sugar 1/2 c. cooking oil 1 t. salt Combine ingredients; mix well. Pour over slaw. Store in a tightly covered container; refrigerate. Will last indefinitely. Makes 1/2 gallon of slaw. =============================== Apple Cake 3/4 cup margarine 1-1/2 cups sugar 2 eggs, well-beaten 2-1/4 cups all-purpose flour 1/4 teaspoon salt 1-1/2 teaspoons baking soda 3/4 cup strong coffee -- cold 1 teaspoon vanilla extract 3 cups chopped apples TOPPING: 1/2 cup brown sugar 1 teaspoon cinnamon 1/2 cup chopped walnuts Cream margarine with sugar and eggs. Add flour, salt, soda, coffee, and vanilla. Fold in the apples. Pour into 7 1/2x11 1/2" Pyrex dish. Mix topping ingredients. Sprinkle topping on cake mixture. Bake in 350�F. oven for 45-55 minutes. Heather ============================= Oatmeal Cake 1-1/4 cups boiling water 1 cup quick oatmeal 1 cup brown sugar � cup shortening � cup white sugar 2 eggs 1-1/3 cups flour cloves 1 teaspoon cinnamon 1 teaspoon soda � teaspoon salt Pour water over oatmeal; let stand 20 minutes. Cream sugars and shortening. Add oatmeal and remaining ingredients. Bake in a 9 x 9 pan at 350� for 30-35 minutes. Frosting: Combine 1 cup brown sugar, � cup milk, and � cup butter; boil 2 minutes. This is not a clone - Morrison's gave the recipe to the food editor of the Louisville Courier-Journal' 1/4 lb cabbage 1 small onion 1 or 2 strips green bell pepper 1/4 cup dill relish 1 cup plus 2 Tbsp real mayonnaise Place cleaned cabbage, onion and green pepper in blender or food processor. Process to fine pulp. Add relish and mayo and stir to blend Place in a covered container. Refrigerate overnight before serving. Makes 2-1/2 cups Emma Someone asked about diabetic recipes. Carroll =============================== Thought since fall is just around the corner I'd pass on my recipe for Cabbage Patch Soup. 3 lbs. lean ground beef 4 cans (14.5 oz) stewed tomatoes 4 cans (15.5 oz) kidney beans 3 cups water 6 medium onions, sliced thin 1 cup chopped celery 4 cups coarsely chopped cabbage 2 Tables. Old Bay seafood seasoning 1 teas. cinnamon 3 teas. salt 4 teas. chili powder Brown ground beef and drain. In large soup pot, put all ingredients. Heat to boil. Reduce heat and simmer for about 1 hour or until vegetables are done. Stir occasionally. Enjoy Barb from La Porte, IN ================================= I haven't bought a loaf of bread in about a year. This is my basic bread recipe. It is easy, delicious and makes a great bread to take to a friend. It is delicious to eat plain, toasted, seasoned for garlic bread, etc. I prefer to use the dough cycle of the breadmaker and bake in a conventional oven; however, if I am rushed for time, the breadmaker does an adequate job. Bread flour is an absolute must for baking bread and I personally prefer King Arthur Bread Flour. I live in a small town and have difficulty finding the brand locally which means I must often substitute for another brand. It works too. Fantastic bread recipe! Enjoy! Basic Bread 3 cups of bread flour (I use one cup of whole wheat and 2 cups of regular white bread flour) 1/3 cup sugar 3 tablespoon of dry milk 1 1/2 teaspoons of salt 2 1/4 teaspoons of dry yeast 3 tablespoons of vegetable oil 1 cup plus 2 tablespoons of water Place oil and lukewarm water in breadmaker. Add all dry ingredients, except for the yeast. that has been warmed in microwave for 20-30 seconds. Place in the breadmaker; leave a slight indention in the middle. Into the indention add the yeast. Set the breadmaker for the dough cycle. Check to see if additional moisture is needed. If so, drop by drops sparingly to avoid too much moisture. When cycle is complete, knead several times on lightly floured surface and roll and shape into a loaf. Place into a greased 9 x 5 inch loaf pan. Cover with a lightly moistened, warm cloth. Let rise until it rises slightly above the top of the loaf pan which is about an hour. Bake in preheated 375 oven for 25 minutes. During the last 8 minutes cover the top with foil to avoid over browning. Slice. Anita in Texas This one I am really proud of. A friend told me what his wife basically uses and I played with it until I got this final product. We are crazy about it -- but it is not for the faint-hearted for sure. Rosemary ================================= TARTAR SAUCE 1 c. mayonnaise or salad dressing 1/4 c. chopped dill pickle 1 tbsp. minced fresh parsley 2 tsp. capers 2 tsp. grated onion 1 tsp. prepared mustard 1 tsp. lemon juice 1 tsp. sugar 1/4 tsp. garlic powder Combine all ingredients. Cover and chill before serving. Serve with fish or shellfish. Yield: 1-1/4 cups. his is for Lori R. I got an oval crockpot for Christmas and yes you can put a whole chicken or turkey breast in it. It's wonderful. It's made by Rival and is called Smart-Pot. It's programmable and has pre- programmed recipes. I love it. Nice and big. Hope this helps you. Thanks, Lorraine =================================== French Meat Pie Mix together; 3 pounds lean hamburger 2 pounds ground pork 2 medium onions, chopped salt and pepper to taste ground allspice to taste 1 to 1-1/2 cups water 1 carton bread crumbs (about 2 cups) Preheat oven to 400F. Cook everything except crumbs in a large skillet, until meat is cooked. Remove from heat and stir in bread crumbs. Let sit while you roll out pie crusts. This amount will make 6 8-inch or 9-inch two crust pies. Bake in preheated oven until tops are brown. Serve hot or cold with ketchup or homemade chili sauce Recipe submitted by Phyllis Knipp--Montana =============================== Strawberry Pie 3/4 cup flour 3 tablespoons soft whipped low-calorie margarine, tub style, not stick 2 tablespoons powdered sugar 3 cups fresh strawberries 1 small package strawberry sugar-free Jell-O 1 cup water 1 tablespoon cornstarch 3 packages sugar-free sweetener Reduced calorie whipped topping Spray a 9-inch pan with cooking spray. Mix flour, low-cal margarine and powdered sugar with a fork and press into prepared pie plate. Bake crust at 350 degrees until golden brown (10-14 minutes). Cool crust before adding filling. To prepare filling: Slice strawberries into medium size mixing bowl. Sprinkle with sugar free sweetener and stir, being careful not to break up the berries. Let stand while preparing the rest of the filling. Mix Jell-O, water and cornstarch in saucepan. Cook over medium heat until thick and clear. Let sit 3-5 minutes and then add strawberries. Stir carefully and turn into the baked and cooled crust. Cool at least a couple of hours before serving. Cut into six pieces and serve with a dollop of whipped topping. Serving size: 6 One serving is 2 Weight Watchers points. Submitted by Joyce =================================== Sourdough Chocolate Cake 1/2 c. sourdough starter 1 c. water 1-1/2 c. flour 1/2 c. powdered milk 1 c. sugar 1/2 c. shortening 1/2 tsp. salt 1 tsp. vanilla 1 tsp. cinnamon 1 1/2 tsp. baking soda 2 eggs 3 (1 oz.) squares semi-sweet chocolate, melted Combine starter, water, flour and powdered milk. Let mixture ferment for 2 to 3 hours. Cream sugar, shortening, salt, vanilla, cinnamon and soda. Add eggs, one at a time, beating well after each addition. Combine creamed mixture and melted chocolate with sourdough mixture. Mix for 2 minutes at medium speed. Pour into 2 well-greased round cake pans. Bake at 350 degrees for 25 to 30 minutes. BUTTERSCOTCH CHOCOLATE FROSTING In a saucepan, combine three 1 ounce squares unsweetened chocolate, 1/4 cup butter, 1/2 cup light cream, 2/3 cup brown sugar and 1/4 teaspoon salt. Bring to a boil, stirring constantly. Cook until chocolate is melted. Remove from the heat and add vanilla and about 3 cups powdered sugar, until a smooth spreading consistency. Spread on sides and top of cake. Jenna ======================================= Spiced Pickled Eggs 1 dozen hard boiled eggs, peeled 3 cups white vinegar 1 Tbsp minced ginger root 1 Tbsp minced horseradish root 1 tsp. whole cloves 1 tsp. whole allspice 1 tsp. white peppercorns 1 tsp. salt Pack eggs in a wide mouthed jar that has been sterilized. Combine other ingredients, bring to boil and simmer for 10 minutes. Pour boiling liquid gently over the eggs, filling the jar completely. Seal at once. Process 10 minutes. With love, Julia ========================================= German Chocolate Poke Cake 1 package German Chocolate Cake Mix 1 can (14 ounces) sweetened condensed milk 1 jar (17 ounces) frozen whipped topping, thawed 3 toffee candy bars crushed Preheat oven to 350 degrees. Bake cake according directions on box and bake ina 13X9 pan. Cool 15 minutes. Poke holes with wooden spoon handle. Drizzle sweetened condensed milk over top of cake. Let stand until milk is absorbed. Cover and refrigerate about 2 hours. Spread whipped topping over top of cake and sprinkle crushed candy on top. Lori R. ========================================= ========================================= This is for the lady looking for the crock pot Swiss steak supper: CROCKPOT SWISS STEAK SUPPER 1-1/2 lb. beef boneless round steak, about 3/4 inch thick 1/2 tsp. each pepper and salt 6 to 8 new potatoes, cut into fourths 1-1/2 cups baby-cut carrots 1 medium onion, sliced 1 can diced tomatoes with basil, garlic and oregano, undrained 1 jar (12 oz.) home-style beef gravy Remove excess fat from beef. Cut beef into 6 serving pieces. Spray 12- inch skillet with cooking spray; heat over medium-high heat. Sprinkle beef with seasonings. Cook beef in skillet about 8 minutes, turning once, until brown. Layer potatoes, carrots, beef and onion in crockpot. Mix tomatoes and gravy; spoon over beef and vegetables. Cover and cook on low heat setting 7 to 9 hours or until beef and vegetables are tender. Sprinkle with parsley. Makes 6 servings. Place in loaf pan. Bake 1 1/2 hours at 350 degrees. If desired: Remove loaf from oven 15 minutes early, cover loaf with catsup, and continue baking. Submitted by Phyllis Knipp --Montana ===================================== Hot Fudge Pudding Cake 1 cup Bisquick baking mix 1 cup sugar 3 tablespoons unsweetened cocoa powder 1/3 cup unsweetened cocoa powder 1/2 cup milk 1 teaspoon vanilla extract 1 2/3 cups hot water Preheat oven to 350 degrees. Grease an 8" square pan. Mix Bisquick, 1/2-cup sugar and 3 tablespoons cocoa powder. Stir in milk and vanilla until blended. Sprinkle evenly with remaining sugar and cocoa powder. Pour water over top. DO NOT STIR. Bake 40 minutes or until top is firm. Dust lightly with confectioner's sugar if desired. Spoon into dessert bowls while hot. Tastes great with a scoop of vanilla ice cream or whipping cream on top. Kate ============================================= This is for Linda in Texas who needs a recipe for salmon patties. This is one that my dad has made for years. It is great hot or cold, as a sandwich or by itself. Gina Salmon Patties 1 can salmon, remove any bones 1/3 cup chopped onion 1 egg beaten 1 small green or red pepper (optional) 1/4 cup celery chopped (optional) enough bread or cracker crumbs to make it all stick together. Start out with about 1/3 cup and go from there. pepper to taste. Mix all ingredients together, and form 4 patties. Fry in small amount of oil, on low heat, till hot. You may need to add a little extra oil. I like mine with a little cheese on top and make it into a sandwich.
