A lot of today's frustration is caused by a surplus of simple answers, coupled with a tremendous shortage of simple problems.

Stuffed Zucchini
1- 1/2 pound small zucchini
1 -1/2 cup fresh bread crumbs
1/2 cup grated processed American cheese
1/4 cup minced onions
1 tablespoons chopped parsley
1 -1/4 teaspoon salt
1/8 cup black pepper
2 eggs, beaten
2 tablespoons butter or margarine
1/4 cup grated processed American cheese

Scrub zucchini well. Cut off ends; do not peel. Cook whole with 1 teaspoon salt in 1 inch boiling water, covered about 5 to 7 minutes. Start heating oven to 350°

Cut zucchini in halves lengthwise. With tip of spoon, carefully remove flesh from shells. Chop into small pieces, then combine with bread crumbs and rest of ingredients except butter and 1/4 cup cheese. Pile mixture lightly into zucchini shells, dot with butter. Sprinkle with 1/4 cup grated cheese. Arrange shells in large baking pan. Bake 30 minutes or until brown on top. Makes 4 servings. Can be make ahead and frozen until needed.

STRAWBERRY FLUFF
1/4 cup boiling water
1 -3 oz pkg strawberry sugar free Jell-O
1- 8 oz fat free cool whip
2 -6 to 8 oz containers of fat free strawberry yogurt

Mix Jell-O and water to dissolve. Stir in yogurt and cool whip. Refrigerate to set. I have put this in a graham cracker crust and served it as a pie. It can also be frozen. I love it as it is a light dessert both in the crust or a bowl.
