Patience and understanding are companions to contentment.

I am sending two newsletters out today. One for August 31, 2005 and 
one for September 1, 2005. I am behind on
posting messages and am about 300 messages behind in getting them all 
posted. The main problem is lack of space in the newsletter for 

all the messages and yesterday when the site went down there are even 
more messages to post. Most of

Down Home and Southwest Recipes

Chow Chow 
1qt. chopped cabbage ( 1 small head)
3 cups cauliflower chopped ( about 1 med head)
2 cups chopped onions
2 cups chopped green tomatoes ( about 4 med. ones)
2 cups sweet green peppers
1 cup chopped sweet peppers 
3 Tablespoons salt
2-1/2 cups of vinegar
1-1/2 cups sugar
1 teaspoon turmeric
1/2 teaspoon ground ginger
2 teaspoons celery seed 
1 teaspoon mustard seeds 

Combine chopped vegetables: sprinkle with salt let stand 4-6 hours in 
a cool place , drain well combine vinegar, sugar, and spices ; 

simmer 10 minutes add vegetables ; and simmer 10 minutes bring to 
boiling .pack boiling hot into hot jars leaving 1/8 inch head space. 

process 10 minutes adjust caps yields about 4 pints

Chocolate Pie 
1 c Sugar
1/4 c cocoa
1 stick (12 cup) Butter, melted
1/2 to 1 cup chopped nuts (pecans)
1/4 c Flour
2 eggs, beaten
1 tsp vanilla

Mix dry ingredients together. Blend beaten eggs and butter together. 
Add to dry ingredients, Add nuts and vanilla. and mix well. pour into 
unbaked pie shell. Bake 30 minutes at 300°
