 TURKEY BREAST ROAST
I love roasted turkey, but with just two of us at home to eat it, doing up a big bird is a little much. Fresh turkey breast is readily available in the market, and makes a relatively quick and easy way to enjoy this traditional Holiday treat any time of the year. 
 
Preheat oven to 350° 
 
1 fresh bone-in, skin on half turkey breast (2-1/2 to 3 lbs.)
2 stalks celery, cut into large chunks
1/2 large onion, quartered cooking spray
1/2 tsp. lemon pepper
1/4 tsp garlic salt
1/4 tsp. poultry seasoning
1/4 tsp. dried thyme leaves
1/4 tsp. garlic powder 
 
Place breast in a shallow roasting pan. Tuck onion and celery underneath the breast cavity. Coat breast with cooking spray. Mix together the seasoning ingredients, and sprinkle all over the top. Roast, uncovered, at 350° for about 1 1/4 to 1 1/2 hours, basting occasionally. When meat thermometer reads 170°, remove from oven, cover with foil, and let set for 15 minutes before carving. 
 
For gravy, pour pan drippings into a small saucepan. Add 1 Tbsp. butter. Heat. Whisk in 1-1/2 Tbsp. flour, and cook for about 2 minutes, stirring constantly. (Thin with a little broth if needed) Slowly whisk in 1 1/3 cups chicken broth until smooth. Bring to a boil, then cook on medium 3 to 5 minutes until slightly thickened. Season to taste.

Pineapple Casserole
1 cup sugar
6 tbsp. all-purpose flour
2 cups grated sharp cheese
2 (20-ounce) cans pineapple chunks drained, and 6 tablespoons pineapple juice reserved
1 cup cracker crumbs ( recommend ritz.)
8 tablespoons (1 stick)real butter melted plus extra for greasing pan
 
Preheat the oven to 350 degrees F. Grease a medium -size casserole dish with butter .
 
In a large bowl, stir together the sugar and flour . Gradually stir in the cheese. add the drained pineapple chunks, and stir until ingredients are well combined. pour the mixture into the prepared casserole dish.
 In another med. bowl ,combine the cracker crumbs , melt the butter , and reserved pineapple juice, stirring with a rubber spatula until evenly blended, spread crumb mixture on top of pineapple mixture, bake for 25- 30 min. or until golden brown
