Thought for the Day
Ability without ambition is like a car without a motor.
There will be no recipe exchange newsletter sent until Tuesday, January 3, 2006. To prevent the 100s of extra messages of our members asking why the newsletter wasn't sent out, I will send a thought for the day and several of my favorite recipes each day. I needed some time off from the day to day posting of the recipe exchange newsletter.

Veggie Beef Pie
1 sm. onion
2 sm. carrots
3/4 lb. ground beef, seasoned with salt & pepper
3 tbsp. butter
3 tbsp. flour
2 c. seasoned mashed potatoes
Cook onions and carrots in salted and boiling water; drain. Season beef and form into 8 balls. Brown in fat placed in casserole. To make gravy, add flour to drippings; brown. Add 1 1/2 cups liquid, using any left from cooking vegetables. Stir until thickened. Add to the meatballs, gravy, onions and carrots. Cover with the mashed potatoes. Bake in a moderate oven, 350 degrees until brown, about 20 minutes.
Twice Baked Potatoes
6 baked potatoes
6 to 12 tbsp. butter
12 tbsp. sour cream
Salt & pepper
3 tbsp. chives (optional)
1 c. Cheddar cheese, grated
Cut potatoes in half lengthwise and hollow out potatoes, saving skins. Beat inner part of potatoes and add other ingredients, beating well. Restuff potatoes and bake for 1/2 hour at 350 degrees.
Mashed Potato Candy
3/4 c. warm mashed potatoes
4 c. powdered sugar
4 c. flake coconut
Chocolate Almond Barki
Mix up and chill all ingredients. Then roll in small balls and chill again. When chilled, dip in melted chocolate almond bark and lay on wax paper.

Potato Cake
1 c. mashed potatoes
2 c. sugar
4 eggs
2 tsp. baking powder
1 tsp. cinnamon
1 c. ground cocoa
2 c. flour
1/2 c. milk
1 c. shortening
1 tsp. nutmeg
2 tsp. cloves
1 c. walnuts
1/2 tsp. salt
Cream shortening and sugar together. Add eggs and mix well. Beat milk and cocoa together until smooth, then add dry ingredients to sugar, shortening and egg mixture. Mix in mashed potatoes. Add nuts and bake at 350 degrees for 1 hour.
Shepard Pie
1 lb. ground beef
1 lg. onion, diced
1 can green beans (French cut)
1 can tomato soup
2 c. mashed potatoes
2 tbsp. butter
Salt
Fry ground beef with onion. Mix ground beef mixture with green beans and soup. (Salt to taste). Top with mashed potatoes. Top with butter. Bake at 325 degrees for 45 minutes.
