Well, they could always just run nautilus in single click mode, so that documents will open in evince (or whatever) with a single click. Seeing the file list and the documents at the same time should then just be a case of adjusting the nautilus and viewer app window sizes and positions the first time they're opened, so you can view them side-by-side... after that their positions should be remembered. (Although unfortunately GNOME isn't very good at the remembering part right now.)
