A while back I used Navit on WinCE for making tracks. Basically it works just like on any other OS, with some parameters in <vehicle>. I remember this feature being broken in some builds in between, but that got fixed. Details are at [1]. I specified attr_types with the attributes that I wanted (position_time_iso8601, position_direction, position_hdop, position_height, position_speed, position_radius, position_sats_used). I have created a couple of traces with this on WinCE. The only problem I remember is that WinCE would run out of memory after some time of tracking (somewhere in the 2 to 3 hour range).
