get some NMEA tracks to simulate a movement, navit will read the file instead
of a real GPS (vehicle,source). In fact it is probably best to generate some 
to test exactly the cases that you want, should be much better than driving 
around and trying to do software development at the same time :)

in theory navit does cater for GPS lag, see vehicle lag attribute

But I surely hope your next GPS will be a lot better, iirc my poor
arm5 device is doing 3-10 GPS updates:)

you can play with the follow parameter to see if that helps.
