I can't tell much about the CompositeTable as I never used it. But it seems
at least not very active. Not sure how mature it is.

Dependent on the use cases you want to support, NatTable is a good choice
as it is actively developed, supports a lot of functions and has a wide
adoption. But it is probably a bit more complicated to understand as it has
its own semantics and configuration options compared to default SWT and
JFace.

For simpler use cases you might want to look at Nebula Grid. That follows
more the semantics of SWT and JFace and is probably easier to use.
